I’ve been obsessed with za’atar since the fabulously fresh stuff I found at the Carmel Market in Tel Aviv. I love the earthiness of the blend. And I’ve been obsessed with cauliflower and za’atar ever since the amazing dish a had at Newport‘s La Vasca. So I put together this simple recipe. I hope you like it too.
Butter-Roasted Cauliflower with Za'atar
- 1 head cauliflower, in sm. florets
- 1 stick butter, sm. cubes
- 1/4 c. za'atar
Preheat oven to 425 F.
Place florets in microwave-safe dish. Add approx. 1" water.
Microwave cauliflower on High to soften, approx. 3 min. Drain.
Place cauliflower in 13x9" glass baking dish. Dot with butter cubes. Sprinkle with za'atar.
Bake at 425 F until tender and browning, approx. 45 min.
