Roasted Cauliflower with Za’atar

I’ve been obsessed with za’atar since the fabulously fresh stuff I found at the Carmel Market in Tel Aviv. I love the sweet earthiness of the blend. And I’ve been obsessed with cauliflower and za’atar together ever since the amazing dish my friend and I enjoyed at Newport‘s La Vasca. So I put together this healthy, low-carb, vegetarian, Mediterranean-inspired recipe. I hope you like it too.

Butter-Roasted Cauliflower with Za'atar
Ingredients
- 1 head cauliflower, in sm. florets
- 1 stick butter, sm. cubes
- 1/4 c. za'atar
- water
Instructions

Preheat oven to 425 F.

Place florets in lg microwave-safe prep bowl. Add approx. 1" water.

Microwave cauliflower on High to soften, approx. 3 min. Drain.

Place cauliflower in 13x9" glass baking dish. Dot with butter cubes. Sprinkle with za'atar.

Bake at 425 F until tender and browning, approx. 45 min.

I have been curious about za’atar for a long time but haven’t really done much with it. Any tips?
I’m curious about za’atar now! Cauliflower is one of the few vegetables that everyone in my house enjoys, so I would love to try something new with it! I saw that you posted a link to how to make za’atar; time to check it out!
My 4 kids and I are obsessed with cauliflower and this recipe looks delish! I haven’t been cooking with za’atar but I have been wanting to try. I don’t think I can go wrong with cauliflower so I think it might be a hit for a first try of za’atar. Thanks for sharing this simple yet gorgeous recipe!
