Breakfast in a Mug

Ingredients

  • cooking spray
  • 2 lg eggs, beaten
  • 1 tbsp milk
  • pinch Kosher salt
  • ΒΌ c. fresh herbs, chopped, plus more for garnish chives, parsley, sage, thyme, basil, tarragon
  • dash Tabasco optional
  • 2 tbsp shredded Cheddar cheese preferably sharp
  • dash paprika optional

Instructions

  1. Coat inside of sm. microwave-safe mug w/ cooking spray.

  2. Blend eggs, milk, and salt in mug. Microwave on high 30 seconds.

  3. Stir in herbs. Microwave on high until eggs are almost set, approx. 30-40 seconds. (You might have to adjust the timing, depending on your microwave.).

  4. Sprinkle w/ Tabasco and cheese. Microwave on high until cheese melts, approx. 20-25 seconds.

  5. Stir. Dust w/ paprika. Garnish as desired. Serve.
