Roasted Butternut Squash with Apples

Ingredients

  • 1 lg butternut squash, peeled, seeds and pulp removed, cut into 1/2-inch pieces 3-4 lbs
  • 1/2 tsp Kosher salt
  • 2 lg Gala apples, peeled, cored, and cut into 1/2-inch pieces
  • 1 stick butter, cut into sm. cubes
  • c. 1 doz sm. fresh sage leaves
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 425 F.  

  2. Line sheet pan with foil and coat with non-stick spray.  Spread squash pieces in single layer over foil.  Season with salt.  Top with apple pieces.  Dot with butter.  Spread with sage leaves.  Dust with cinnamon.  

  3. Bake at 425 F until tender and browning, approx. 20-25 min.  Serve with additional salt and/or cinnamon as desired.
