Breakfast in a Mug
Looking for an easy breakfast to eat before (or during!) your morning Zoom meeting? I put this simple recipe together because I wanted something quick but protein-packed. To make it flavorful with minimal prep, I’ve used a blend of fresh herbs; you can mix up your own favorites. If you want something heartier, you can always add a tablespoon of cooked and crumbled breakfast meat, chopped spinach or broccoli, or sautéed onions or bell pepper. You can substitute a milder cheese as well if you prefer, though I think sharp Cheddar gives the eggs a nice morning wake-up punch. Enjoy!
Breakfast in a Mug
Ingredients
- cooking spray
- 2 lg eggs, beaten
- 1 tbsp milk
- pinch Kosher salt
- ¼ c. fresh herbs, chopped, plus more for garnish chives, parsley, sage, thyme, basil, tarragon
- dash Tabasco optional
- 2 tbsp shredded Cheddar cheese preferably sharp
- dash paprika optional
Instructions

Coat inside of sm. microwave-safe mug w/ cooking spray.

Blend eggs, milk, and salt in mug. Microwave on high 30 seconds.

Stir in herbs. Microwave on high until eggs are almost set, approx. 30-40 seconds. (You might have to adjust the timing, depending on your microwave.).

Sprinkle w/ Tabasco and cheese. Microwave on high until cheese melts, approx. 20-25 seconds.

Stir. Dust w/ paprika. Garnish as desired. Serve.
