Don’t you just love the soft melt-in-your-mouth comfort of butternut squash? It’s been one of my favorite vegetables since I was growing up in New England. So I created this simple recipe to go with pork for Christmas dinner. The roasted apples give the squash an extra zing of sweetness. I’m happy to say it was a big hit! I hope you and your family enjoy it too.

Roasted Butternut Squash with Apples
Prep Time 15 minutes
Cook Time 25 minutes
Total Time 45 minutes

Ingredients
- 1 lg butternut squash, peeled, seeds and pulp removed, cut into 1/2-inch pieces 3-4 lbs
- 1/2 tsp Kosher salt
- 2 lg Gala apples, peeled, cored, and cut into 1/2-inch pieces
- 1 stick butter, cut into sm. cubes
- c. 1 doz sm. fresh sage leaves
- 1 tsp ground cinnamon

Preheat oven to 425 F.

Line sheet pan with foil and coat with non-stick spray. Spread squash pieces in single layer over foil. Season with salt. Top with apple pieces. Dot with butter. Spread with sage leaves. Dust with cinnamon.

Bake at 425 F until tender and browning, approx. 20-25 min. Serve with additional salt and/or cinnamon as desired.
