I love the flavor of sesame and the intense nuttiness of tahini. I’ve developed this easy sauce to bring it to a variety of dishes. Using both sumac and lemon juice gives it a layered citrusy freshness. This simple sauce is delicious spooned over pan-roasted cauliflower or baked chicken or served as a dip with crunchy raw vegetables. I hope you enjoy it too.
- 1/2 c. tahini, at room temp.
- 1/3 c. EVOO
- 3 cloves garlic, ground into paste
- 1/4 tsp. sea salt
- 1/2 tsp ground sumac
- juice of 1 lemon
- 3 tbsp. warm water
Blend all ingredients well in small bowl.
Serve at room temperature. Can be refrigerated in an airtight container for up to one week.
