Cheddar-Mashed Cauliflower
I love mashed cauliflower as a low-carb alternative to mashed potatoes. It’s one of my favorite comfort-food substitutes. But even though mashed cauliflower can closely match the creamy comfort of potatoes, somehow it still strikes me as a little bland. So I add cheddar cheese. You can substitute any cheese you like, but I do recommend one with a strong flavor.

Cheddar-Mashed Cauliflower
Ingredients
- med-lg head cauliflower, in florets
- 1/2 tsp salt, divided
- 1/2 stick butter
- 1/4 c. milk
- 1 tsp garlic powder
- 8 oz cheddar, shredded
- water
Instructions

Place cauliflower florets in lg saucepan. Fill saucepan with water until cauliflower is just covered. Add 1/4 tsp salt. Bring to boil and cook until cauliflower is soft, approx. 20 min.

Drain cauliflower in colander and return to saucepan. Add butter, milk, garlic powder, remaining salt, and cheddar. Mash with potato masher until smooth.
