Baked Pimiento Cheese Dip

My friend and I love pimiento cheese dip, and we especially love it hot.  Whenever we pick some up at the store, I always heat it up before serving.  So I decided to create my own recipe for a baked pimiento cheese dip to enjoy fresh from the oven.  If you like hot cheesy dips, I hope you’ll give this one a try.  But please feel free to experiment with other cheeses, like Monterey Jack, if you prefer.  Typically, the dip would be served with crackers or bagel chips.  If you want to go low-carb, I enjoy it with bell pepper sticks.  And we love it atop bun-less burgers or alongside grilled kielbasa.
